Duchess Potatoes are light and fluffy inside and buttery and crisp on the outside.  Perfect alongside any meal!
INGREDIENTS
·         1.5 lbs potatoes peeled and quartered
·         3 tablespoons butter
·         salt & pepper to taste
·         1/8 teaspoon nutmeg
·         2 eggs separated

INSTRUCTIONS
1.    Preheat oven to 425°F.
2.    Boil potatoes in a pot of salted water until tender, about 15 minutes.
3.    Drain well. Mash potatoes until very smooth. Add 3 tablespoons butter and seasonings to taste. Stir in egg yolks.
4.    Place the potato mixture into a piping bag with a star tip. Pipe onto a parchement lined pan.
5.    Whisk egg whites. Brush egg whites over piped potatoes and bake 10-15 minutes or until golden.
