Cherries 'N Cream Cake

INGREDIENTS

·         2 cans (14.5 oz) tart cherries, drained
·         1 3/4 cups granulated sugar, divided
·         1 3/4 cups all-purpose flour
·         1 cup sour cream
·         8 oz cream cheese, softened
·         3 large eggs, divided
·         1/2 teaspoon salt
·         1 tablespoon lemon juice, divided
·         1/2 teaspoon salt

PREPARATION

1.    Preheat oven to 350°F and lightly grease an 8-inch springform cake pan.
2.    In a large bowl, combine 1 1/2 cups of the sugar with the flour, and salt. Stir in the sour cream, half of the lemon juice, and two of the eggs. Pour batter into prepared pan and top with drained cherries.
3.    Mix together cream cheese, 1/4 cup sugar, 1 egg, and 1/2 tablespoon lemon juice until well combined. Pour evenly over cherries.
4.    Bake until mostly set, but still gooey, 45-55 minutes. Let cool at least one hour before serving. Enjoy!
