Healthy Apple Sultana Oat Bites | Slimming World

This recipe is gluten-free, vegetarian, Slimming World and Weight Watchers friendly
·      Extra Easy : 1 HEb and 4.5 syns (for 4 bites)
·      Green/Vegetarian : 1 HEb and 4.5 syns (for 4 bites)
·      Original : 1 HEb and 4.5 syns (for 4 bites)
·      WW Smart Points : 2 per bite
·      Gluten Free : use gluten-free oats
if not using your healthy extra B - these are 3 syns per bite. 
*suitable for freezing
Ingredients
·      160g of oats (4xHEb's)
·      160g of pumpkin puree
·      160g of fat free plain Greek Yoghurt
·      160g of chopped fresh apple - 4 syns
·      3 large eggs
·      2 tsp of baking powder - 0.5 syns
·      pinch of salt
·      1 tsp of cinnamon
·      1 tsp of vanilla extract
·      1/4 cup (4 tbs) of maple syrup - 8 syns
·      30g of sultanas - 4.5 syns
Instructions
1.   Preheat oven to 180c/350f (gas mark 4)
2.   Add to a bowl the oats, cinnamon, baking powder and salt and mix to combine, set aside.
3.   In a separate bowl add the eggs, pumpkin puree, Greek yoghurt, maple syrup and vanilla extract and whisk until smooth.
4.   Add this to the oat mixture and stir until all combined. 
5.   Pour into an 8x8 square brownie pan, lined with parchment (if not using parchment, you will need to grease the pan well with spray oil).
6.   Sprinkle on top the apples and sultanas, and carefully push down into the mixture with a spatula, you want them to be half in the mixture, half sticking out on top.
7.   Place in the oven and bake for 40-50mins until lightly golden - a skewer entered into the centre should come out clean. 
8.   Allow to cool, and then slice into 16 evenly sized square bites. 
9.   Enjoy!!
