Meat Stuffed Mushrooms with Minced Turkey and Cheese

Ingredients 
  • 10 large mushrooms 
  • 200 grams mince meat turkey see note above 
  • 1/2 Onion chopped fine
  • 3 tbsp Olive oil 
  • 1 clove Garlic
  • 1/4 tsp Oregano  chopped
  • 1/4 cup Parsley 
  • Salt and pepper to taste
  • 1/2 cup Mixed cheeses see note above  


Method
  1. Preheat oven at 170 C / 340 F
  2. Prepare Mushrooms 
  3. Wipe the mushrooms well with a damp cloth
  4. Remove caps and gills to create space for stuffing
  5. Oil a baking tray with a little olive oil spray
  6. place mushroom and keep ready for stuffing.  
  7. Chop the caps fine and add them to the chopped onions. 
  8. Prepare Meat
  9. Add one tbsp olive oil to a saute pan 
  10. Saute the chopped onion, mushroom caps and garlic 
  11. Brown meat in the saute pan with the onion mixture
  12. Cook on medium-high so the meat browns with not too much liquid left behind
  13. Add the herbs - oregano and parsley 
  14. Season with salt and pepper.
  15. Stuff Mushroom
  16. Using a spoon hold each mushroom over the meat pot so the extra falls back in the pot rather than the baking tray
  17. Once all the mushrooms are stuffed. 
  18. Top each mushroom with a mixture of the cheese. 
  19. Bake for about 20 minutes until the cheese is nice and golden.
