Meat Stuffed Mushrooms with Minced Turkey and Cheese

Ingredients 
  • 10 large mushrooms 
  • 200 grams mince meat turkey see note above 
  • 1/2 Onion chopped fine
  • 3 tbsp Olive oil 
  • 1 clove Garlic
  • 1/4 tsp Oregano  chopped
  • 1/4 cup Parsley 
  • Salt and pepper to taste
  • 1/2 cup Mixed cheeses see note above  


Method
  1. Preheat oven at 170 C / 340 F
  2. Prepare Mushrooms 
  3. Wipe the
mushrooms well with a damp cloth
  • Remove caps and gills to create space for stuffing
  • Oil a baking tray with a little olive oil spray
  • place mushroom and keep ready for stuffing.  
  • Chop the caps fine and add them to the chopped onions. 
  • Prepare Meat
  • Add one tbsp olive oil to a saute pan 
  • Saute the chopped onion, mushroom caps and garlic 
  • Brown meat in the saute pan with the onion mixture
  • Cook on medium-high so the meat browns with not too much liquid left behind
  • Add the herbs - oregano and parsley 
  • Season with salt and pepper.
  • Stuff Mushroom
  • Using a spoon hold each mushroom over the meat pot so the extra falls back in the pot rather than the baking tray
  • Once all the mushrooms are stuffed. 
  • Top each mushroom with a mixture of the cheese. 
  • Bake for about 20 minutes until the cheese is nice and golden.
