Ingredients
·
450g (1lb) of
extra lean beef mince (or you can use Chicken, Lamb or Pork mince)
·
1/2 cup (120ml)
of uncooked quinoa
·
1 cup (240ml) of
chicken or vegetable stock or broth
·
2 tablespoons of
tomato paste
·
2 teaspoons of
paprika
·
2 teaspoons of
cumin
·
handful of
chopped fresh coriander
·
salt and black
pepper
·
1 egg, beaten
·
Spray oil
Instructions
1.
Add the quinoa
and stock to a saucepan over a medium high heat
2.
Bring to a boil,
then reduce to a simmer until liquid is almost absorbed. Turn off heat cover
with a lid and leave for 10 mins, then fluff with a fork and set aside to
cool.
3.
Preheat oven to
180c of 350f (gas mark 4)
4.
Add the ground
beef, cumin, paprika, tomato paste, chopped coriander, salt, pepper and egg to
a bowl, along with the cooled quinoa and mix well to combine.
5.
Line a baking
tray with parchment paper
6.
Form the mixture
into meatballs (you can make large or mini ones)
7.
Place on the
parchment lined tray and spray over the top with spray oil.
8.
Bake in the oven
for approx 20 mins until golden and cooked through.
