Low Syn Cheesecake Dip with Apple Nachos

This recipe is gluten free, vegetarian, Slimming World and Weight Watchers friendly
·      Extra Easy - 3.5 syns per serving
·      Green/Vegetarian - 3.5 syns per serving
·      Original/SP - 3.5 syns per serving
·      WW Smart Points - 4
·      Gluten Free - use gluten free cookies (remember to adjust syns accordingly)
Ingredients
·      1.5 cups (360ml) of cottage cheese
·      1 tsp of vanilla extract
·      7.5g of semi-sweet chocolate chips - 2 syns 
·      2 tbs of sukrin: 1 - 1 syn
·      1 digestive biscuit (or other cookie of choice) - 3.5 syns
·      2 large crisp sweet apples (I used honey crisps), sliced into thin slices
Instructions
1.   Add the cottage cheese, vanilla and sukrin: 1 to a mini blender and blend till smooth (or you can add to a tall beaker and blend with a stick blender)
2.   Stir the chocolate chips into the mixture. 
3.   Add the mixture to a bowl.
4.   Crumble the digestive into fine crumbs over the top.
5.   Serve with the apple slices
6.   Dig in and enjoy!!
