Low Syn Pineapple Mexican Pork Carnitas (Pressure Cooker and Slow Cooker)

Ingredients
·       2lb of pork shoulder (remove visible fat) - sliced into large pieces
·       1 large onion, halved and sliced
·       3/4 cup (180ml) of Pineapple Juice (5 syns)
·       2 tbs of lime juice
·       1/2 tbs of cumin
·       1 tsp of salt
·       1/2 tbs of garlic powder
·       pinch of cayenne pepper
·       cooking oil spray

to serve:
Fresh Coriander and Lime Slices

Instructions
1.  Instant Pot
2.  Add the pork, onion, pineapple juice, lime juice and seasoning to the instant pot
3.  Set to manual high pressure for 25 mins
4.  Once finished, let the pressure release naturally for approx 10 mins
5.  If you like the edges charred/crispy, spread out on a baking tray with the juice and place under the grill, medium heat, and grill till the edges crisp up, rotate on the tray and place back under the grill and repeat.
6.  Serve sprinkled with fresh coriander, lime slices and your choice of sides
Slow Cooker:
1.  Add the pork, onion, pineapple juice, lime juice and seasoning to the slow cooker. 
2.  Cook on low for 8 hours or high for 5 hours
3.  Once cooked shred with a fork. 
4.  If you like the edges charred/crispy, spread out on a baking tray with the juice and place under the grill, medium heat, and grill till the edges crisp up, rotate on the tray and place back under the grill and repeat.
5.  Serve sprinkled with fresh coriander, lime slices and your choice of sides
