PEANUT BUTTER CHOCOLATE FAT
BOMBS
Ingredients
8 ounces cream cheese (softened)
1/2 cup peanut butter
1/4 cup coconut oil, + 2 TBSP
1 TSP kosher salt
1 cup dark chocolate chips
Preparation
Combine cream cheese, peanut butter, 1/4 cup
coconut oil, and salt in a mixing bowl & beat until it’s fully combined.
(Usually takes about three minutes.) Then stick the bowl in the freezer to firm
up the mixture for about 15 minutes!
While you wait line a baking sheet with
parchment paper.
When the 15 minutes is up take small
cookie scoop or a spoon & scoop out little golf sized balls on your baking
sheet. (It’s ok to use your hands to make them round. You don’t have to tell
anybody.) Now put this back in the fridge to harden for about 5 minutes.
Now you’re going to make a chocolate
drizzle. Take your chocolate chips and the 2 TBSP of coconut oil and put them
in a microwave safe bowl and nuke it for 15 second intervals until melted.
Drizzle (or pour) this over the balls &
put back in the fridge to harden for another 10 minutes. It’s totally worth it!
