Syn Free Mushroom and Parmesan Meatballs with Rich Onion Gravy

Ingredients
Ingredients
For the Meatballs:
·      600g (210z) of extra lean chicken mince (use extra lean turkey mince if you can’t get this)
·      200g (7oz) of mushrooms (I used baby portobello)
·      90g (3oz) of freshly grated parmesan (3xHEa’s)
·      1 clove of garlic, crushed
·      1 handful of fresh Italian Parsley
·      Spray oil
For the Sauce:
·      2 red onions, finely chopped
·      4 cups of chicken stock
·      2 cloves of garlic, crushed
·      1/2 tsp of dried thyme
·      1 tbs of tomato paste
·      1 tbs of balsamic vinegar
·      handful of fresh parsley, finely chopped. 
Instructions
1.   Preheat oven to 200c or 400f (gas mark 6)
For the Meatballs:
1.   Add to a mini food processor, the mushrooms, parsley, parmesan and garlic and process until roughly chopped.
2.   Add to large bowl with the extra lean chicken mince
3.   Mix together well to combine
4.   Form into  24 meatballs and place on a baking tray lined with parchment paper
5.   Spray over the top with spray oil
6.   Bake for 12 minutes
7.   Remove and set aside
For the Sauce:
1.   Spray a deep frying pan with some spray oil, add the onion and fry to soften for approx 5 mins.
2.   Add the garlic and thyme, balsamic vinegar and a little bit of the stock and continue to fry until the stock reduces down and the onions are nice a caramelized.
3.   Add the tomato paste and remaining stock, bring to a boil and simmer for 20 mins.
4.   Add the gravy to a blender and blend till smooth
5.   Pour the gravy back into the frying pan, and add the meatballs.
6.   Simmer covered for 10 minutes.
7.   Sprinkle with fresh chopped parsley
8.   Serve with your choice of sides.
