Ingredients
·
1 egg
·
1 can sweetcorn,
drained and patted dry
·
1 tsp of
chilli powder
·
1 spring onion,
chopped
·
handful of
fresh coriander finely chopped
·
1 tbsp of juice
from a fresh lime
·
2 tbs
of cornstarch (or tapicoa or arrowroot flour (3 syns)
·
Spray Oil
·
salt and pepper
to season
Instructions
1.
Preheat oven to
200c or 400f (gas mark 6)
2.
Add the
sweetcorn, chilli powder and salt and black pepper to a bowl
3.
Mix to combine
4.
Whisk the egg
with the cornstarch and stir this into the sweetcorn
5.
Blend 1/4 of the
mixture until smooth.
6.
Add back the
bowl along with the chopped cilantro and spring onion
7.
Line a baking
tray with parchment paper
8.
Lightly spray
over the top of it with spray oil
9.
Spoon the
mixture onto the tray, into 8 equal sized fritters
10.
Spray over the
top with spray oil
11.
Bake for 15 mins
then carefully flip and bake for another 15 mins until golden all over.
12.
Serve with salad
and yoghurt mixed with lime juice and salt and black pepper or your choice of
sides.
