Salt and
Pepper Chips
INGREDIENTS
For the Chips

1-2 whole Chillies deseeded and sliced. You can add
more or use less depending on how hot you want it

Frylight
·
For
the Spice MIx
·
1 Good
Pinch Chilli Flakes depending
on how hot you like it
INSTRUCTIONS
1.
To Make the Salt and Pepper Mix

Toast the salt flakes in a hot pan until they
start to brown - it's very important to do this to get the true salt and pepper
flavour
3.
Mix the toasted salt and all the other spice mix
ingredients together
4.
To Make the Chips - Oven Method

Pre heat the oven to 200°C
6.
Peel the potatoes and cut them into chunky chips
7.
Place them in a pan of boiling salted water and
simmer until they start to soften but are still quite firm
8.
Drain the potatoes and spray a baking tray with
Frylight
9.
Coat the potatoes in Frylight and sprinkle them
with a little Salt and Pepper Mix
10.
Place in the oven for 15-20 minutes until they
are soft and starting to colour
11.
Spray a frying pan with a generous amount of
Frylight, then add the chopped spring onions, peppers and chillies and cook for
a few minutes until they start to soften
12.
Add the potatoes to the pan and sprinkle with
the Salt and Pepper Spice Mix (you can use as much or as little as you like).
Keep stirring and tossing the ingredients so they do not catch and burn. You
may need to add a bit more Frylight to the pan
13.
Continue cooking until the chips are golden
brown, then serve
