How to cook Spanish Seafood Paella

Ingredients:

·         75 gr olive oil
·         A large onion, chopped
·         Two cloves garlic, chopped
·         Two peeled and chopped tomatoes
·         A half teaspoon sugar
·         Salt to taste
·         A teaspoon sweet paprika
·         Saffron threads
·         Four small cleaned squids, cut bodies into rings and left the tentacles whole
·         400 gr paella rice or risotto rice
·         600 ml fish or chicken stock
·         100 gr dry white wine
·         12 large peeled and deveined shrimps
·         16 scrubbed and debearded mussels
·         lemon wedges

Directions:

·         1Prepare a paella pan, or you may use a large skillet. Then, cook the olive oil on it and onion until it turns soft. Next, add the garlic and cook again for a few minutes. Also, put the tomatoes, paprika, sugar, salt, and saffron. Stir well and cook for five until 7 minutes until the tomatoes thicken.
·         2After that, you may put the squids together with the mixture. Stir and cook for several minutes. Then, add the rice and stir well. Now, prepare a saucepan and fill with the stock and wine. Turn on the heat and bring to boil. Next, pour this sauce over the rice and cook again until boil. Here, you can add salt to taste.
·         3Put the rice in the skillet and no need to stir anymore. Next, cook this over medium-low for around 25 minutes until the rice and shrimp cooked evenly. Then, Turn the heat off and surface the skillet with foil. Let it rest for five to 10 minutes.
·         4To use the time, you may steam the mussels in a pot with boiling water. Next, you may open the foil and assemble the mussels into the squid. Here, you may also add lemon wedges on top of squid.
