Irish Cream Triple Chocolate Chunk Cookies
Ingredients
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  •  1/2 C Irish Cream creamer
  •  1/4 C Butter
  •  1/4 C Shortening
  •  1 tsp Vanilla extract
  •  1 Egg
  •  2 1/4 C All-Purpose Flour
  •  1/2 tsp Baking Soda
  •  1/4 tsp Salt
  •  2 C Milk chocolate chips (I used Hershey's Baking Melts)
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chunks

Instructions

1.       In the bowl of a stand mixer, beat together the butter and shortening. Add the sugars and beat until creamy. Add the egg, creamer, and vanilla and mix well.
2.       Mix in the flour, baking soda, and salt, just until a dough forms.
3.       Pour the chocolate chips into the bowl and use a wooden spoon or sturdy spatula to mix them in.
4.       Scoop by 1/4 cup (about the size of an ice cream scoop) onto a silicon or parchment lined cookie sheet (6 to a cookie sheet). Bake at 350 for 15 minutes (baking time may vary 2-3 minutes). Makes 20 cookies.
